Italian Sausage Soup

Here's one of my hubby's favorite soups.... this is perfect for those cold winter days.  It's so yummy with couple pieces of good crusty bread.

1 lb Sweet Italian Sausage chopped up
1 C white Rice
10 3/4 oz can chopped tomatoes
10 oz box, thawed and drained chopped frozen spinach
6 C Beef Broth
1/4 t black pepper
Pecorino Romano or Mozzarella Cheese for garnish

Cook sausage and drain.  Add back to pot with rice, broth, tomatoes, and black pepper.  Bring to a simmer and cook for 12-15 minutes or until rice is tender.  Stir in spinach and let simmer a few minutes.  Spoon into bowls and garnish with cheese.

*If doubling do not double spinach.  This freezes really well!
